Lunch: Guacamole
Jalapeños are the perfect way to add a little spice to your guac. Follow this easy recipe below:
Ingredients:
- 4 ripe avocados
- 1 shallot, minced
- 1 to 2 jalapeños, seeds removed and minced
- 2 tablespoons green onions, minced
- ¼ cup cilantro, chopped
- Juice of ½ lime
Combine all ingredients in a large bowl and mash with a spoon or pestle. Add salt and pepper to taste.
Dinner: Asian Coleslaw
Many Asian foods pair well with spicy ingredients. To make Asian coleslaw, simply combine bagged coleslaw mix with bell peppers, cilantro and a diced jalapeño pepper. Toss with rice vinegar, oil, salt and a pinch of sugar. If you want some crunch, you can top with peanuts.
The slight spicy kick of this coleslaw is the perfect side for shrimp pot stickers.
