There are as many easy, tasty and quick meals you can make in muffin tins as your imagination allows. And we’re not just talking about sweet snacks and cakes. We’re talking about good-for-you, lip-smacking muffin tin recipes that can be made quickly, are nutrient-rich and get dinner on the table without a whole lot of fuss. Here are five of our favorites to help get you started.

Turkey Mini Meatloaves

The genius thing about this muffin tin recipe is that it uses whole wheat couscous (a grain-like pasta), zucchini and a bunch of savory flavor boosters like Dijon mustard and BBQ sauce to make these mini, ground turkey meatloaves into little works of edible art. Everything gets mixed in one bowl, saving you on the clean-up time and effort. And best of all? The mini loaves cook in half the time of a regular meatloaf. Store-bought wontons are this recipe’s muffin-tin liner to give you crunchy “cups” that, you fill with a host of veggies, black beans, spices and herbs topped with cheese and a yogurt chipotle drizzle. Found on the Peas & Crayons blog, this recipe is “uber customizable.” Not feeling the black beans? Add chickpeas. Want a hit of protein? Add precooked chicken, ham or turkey cubes.
